Back from New Year’s break and the Maverick team hasn’t missed a beat. Warm, comforting, winter dishes fill the Dinner menu and the response has been nothing but outstanding. We are glad to be back and the outlook for 2008 is extremely positive. In years past, January has typically been a slower month for all restaurants, as everyone resolves away the excessiveness of the holiday season and takes a step back to put work and play into perspective. But, the best part of this business is that everyone needs to eat and it seems like we are back to usual with a full dining room every night, so make your reservations early and soon to check out the tasty new menu!
 
The January calendar is light on Round Ups with Wicked Cheap Wine Night every Monday. Same story as last year, 40% off any bottle of wine. What a deal!  As we move into February, single and married couples become frenzied as they try to make that Hallmark holiday extra special. Yes, Valentine’s Day is right around the corner so make your plans soon as we have already made ours. In order to accommodate everyone this year we will be inviting loving couples to our Four Course Dinner ($50 per person or $80 with wine pairings) for two nights, Wednesday, February 13th and Thursday, February 14th. The menu has not been finalized, but Scott and his staff are working diligently on what will surely be a stunning display of culinary delights with perfectly paired wines. What if you don’t have a date?  Big deal, bring some friends and dine right in February.
 
Not only are we looking forward to our upcoming Round Ups, Scott and his wife Stacy along with a core of talented contributors, are working hard on Issue 2 of Out of the Kitchen.  If you haven’t heard about our new magazine well then you need to get in the loop.  Our first issue has been receiving great reviews. Our team has laid the foundation for what will surely be an even better second issue, and the subsequent issues will only get better and better, as we receive more support from the community. Issue 1 is complimentary and can be picked up at Maverick or several other fine establishments around town including: Avedano’s Meats, Prather Ranch Meat Co., BiRite Market, and Ella Bella Farms on Saturdays at Ferry Plaza Farmer’s Market. Future issues will sell for $8 and we are offering a 1-year quarterly subscription for $32. Finally, we want to thank everyone for voting us “Best Brunch” for 7x7 Magazine’s Eat and Drink Award. We have received the award two years in a row and we are looking to continue lining up the “Piggies” on our shelf.  We are very fortunate for all the support we get, thank you for voting and for the entire 2007 year.  It was an incredible year for all of us at Maverick and we could not do it without you. We look forward to serving you soon in 2008.

I would like to thank all of our guests, and hard working staff, for supporting Maverick and our wine program in 2007. It was a year to remember. We are looking forward to offering you an even more spectacular wine list, pairings, and events in 2008.  New wines to look out for on January’s list include:
 
A 2004 Zierfandler produced by Stadlmann in the Thermen region around Vienna. This indigenous white Austrian varietal produces stunningly rich, but clean and crisp wines that are versatile with food, as well as quaffing on their own.
 
Bill Arbios’ 2002 Cabernet Sauvignon from his estate vineyards in Alexander Valley.  The west facing estate vineyard is planted on a forty-five degree slope which helps produce a world-class cool climate Cabernet. It is extremely pretty and seduces you in with cedar, violets and cherries on the nose and then wows you with great structure on the palate.
 
“One of a Kind Wine Wednesday” returns with a bang in 2008. Check out the Winter/Spring 2008 calendar below for more information. Seminars are on Wednesdays from 5:30pm - 6:30pm, limited to ten guests, and cost $35 plus tax.  Mike is also available to conduct customized semi-private wine seminars or events. February 20th “Que Sera Sera:  The Syrah Taste Test”
Syrah is presently one of the most widely planted grapes in the western United States. It is planted in a myriad of soils and growing areas with drastically different climates. Amongst wine writers and professionals, there is much debate as to where it grows best. We will continue and add to this discussion by tasting three very distinctive Syrahs: two from California and one Washington. These heavier wines will be paired with three hearty dishes from the kitchen.
 
March 19th “Junk Food Wine Pairing Challenge”
Mike will tackle some challenging foods that are often eaten, but rarely, if ever, paired with wine. Think Cool Ranch Doritos, Carne Asada Taco’s, and a few more surprises. You decide if the pairings work. This is one not to miss!
 
April 23rd “Riesling; The Sommeliers Desert Island Wine?” 
Riesling gets top billing amongst most wine professionals. It fills their cellars and is the primary choice for their “desert island” wine. We will investigate why and make believers out of any naysayers who think that this grape only makes ‘sweet’ wines. Mike will pour one stunning Oregon and two classic German Rieslings, and pair them with a range of foods from the kitchen.
 
May 21st “Let’s Be Franc—Cabernet Franc Comparative Tasting”
Historically, the Cabernet Franc grape has been resigned to a blending tool in Bordeaux and Napa Valley. When grown and vintified properly it attains a beautiful herbal quality that marries perfectly with its inherent pureness of fruit.  These qualities help it match very well with typically hard to pair foods, like earthy or bitter vegetables. We will sample one 100% Cabernet Franc from California and one from the Loire Valley, as well as a Cabernet Franc/Merlot blend from California as a comparative tool.
